美素食 m e i s u s h i
「美素食-meisushi-」(メイスーシー)は、造形作家/料理研究家の松永智美が、素食の伝統とルールを基本に、日本ならではの素材と、みずからの創意、審美眼を加えて展開する「新時代の菜食」です。
その言葉通り「美しく素材を食す」ことで身体を内側から整え、心をゆっくりと落ち着かせてくれる料理です。
「美素食-meisushi-™」は 、株式会社 紅の登録商標です。
"Súshi" is a traditional vegetarian cuisine that arose in the Chinese cultural world, which does not use any animal ingredients.
"美素食-meisushi-™" is “Contemporary vegetarian cuisine”, created by Kyoto-based artist and cooking expert, Tomomi Matsunaga. Based on the traditions of Súshi and its rules, Matsunaga has introduced her own creativity and aesthetic sense into Súshi. As can be seen by the words in the name meisushi: mei (beauty) su (pure ingredients), shi (to eat), we can improve our body condition from inside, and bring calmness by “beautifully eating pure ingredients.”
Derived from Buddhism, "Súshi" avoids the so-called “three abstinences” (the flesh of animals, fish, and birds), and “five pungent vegetables” (leeks, chives, garlic, scallions, and onions). We use materials that do not burden your mind and body, mainly mushrooms, vegetables, and beans. "美素食-meisushi-" pays particular attention to mushrooms and is characterized by cooking many types of mushrooms in a variety of ways.
As can be seen from a type of tofu-patty called Ganmodoki, which resembles meat, vegetarian cuisine is restricted to non-animal ingredients but often uses exquisite techniques to mimic meats and seafoods. While observing the rules of vegetarianism, we are exploring not only taste, but also the fun of invention and esthetics of shapes.
"美素食-meisushi-" is not just a way of cooking, but an inclusive creation that comprises not only food itself but also the whole space where you eat it. We create ART&EAT collaborations with artists and chefs at various venues such as art museums, galleries, temples, old stores with long traditions, etc.
